Scallops - the ultimate party starter

Ingredients

Serves:
  • 60 each Canadian scallops (6 per serve)
  • 100 mL Crisco Canola Oil
  • 1.5 kg ETA Mayonnaise
  • 250 g Chipotle chilies in adobo sauce

Method

Raw Inredients

Step 1

Mix or blend mayonaise and chipotle chillies together.

Chiptole Mayonnaise

Step 2

Sear scollops and season with salt and pepper.

Lightly SearedProperly Seared

Step 3

Dress plate with Chipotle mayonnaise and place scollops on mayonnaise.
