The ultimate millennial starter – garlic bread and avocado on one plate. This refresh of the all-time favourite of avocado on toast is guaranteed to impress your customers.

Ingredients
Serves:
- 2 each La Famiglia Garlic Bread Loaf
- 2 each Avocados (Crushed)
- 1 each Lemon (Juiced)
- 200 g Green Peas
- 50 g Butter
- 1/2 each Bun Mint (Picked, chiffonade)
- 50 g Fetta
- 1/2 each Avocado (Sliced)
- 32 g Basil Pesto
- 1/4 each Bun Kale Leaves (Fried)
- 1 each Pomegranate
- 1 each Micro Red Shiso (Garnish)
Method
Step 1
Cook La Famiglia Garlic Loaves as instructed.
Step 2
Mix crushed avocado with enough lemon juice and seasoning to taste. Set aside.
Step 3
In a saucepan, over a low heat, cook peas in butter. When warm, crush peas roughly with a fork, add mint, adjust seasoning and set aside.
Step 4
Spread crushed avocado on each half of the cooked garlic loaves. Cut each half into three portions (the trio).
Step 5
Top one-third of each with mushy peas and crumble fetta on top.
Step 6
On next third, add a slice of avocado and top with a spoonful of basil pesto.
Step 7
On final third, top with fried kale, pomegranate and red shiso. Then, drizzle with extra virgin olive oil and serve your avocado toast recipe.
